Ascorbic acid (vitamin C) in a hydrophilic environment acts as a biological antioxidant. It reacts with free radicals, resulting in the formation of a more stable ascorbic acid radical, which is then converted back into ascorbic or dihydroascorbic acid through various reactions involving glutathione peroxidase. Vitamin C combined with vitamin E prevents the formation of toxic nitrosamines from N-nitrosic compounds found in food products. Selenium - the oligoelement selenium is a component of the antioxidant enzyme glutathione peroxidase, which removes peroxides and free radicals from the cell.
